This comes almost exactly from "Joy of Cooking", '75 edition. I've had it three weekends now and its always good.
1 cup rice flour
1 or 2 tablespoons sugar
1/2 teaspoon salt
1 teaspoon baking soda (or less, this works for me)
Add all the dry ingredients and mix them thououghly. Sifting works for this.
Beat one egg until light, add 1 cup buttermilk and beat until mixed completely.
Add buttermilk mixture to dry-stirred rice flour ingredients and mix until completely combined and smooth. Remember there is no gluten here. Let it set a few minutes to allow the baking soda to react with the buttermilk. Apply to griddle or frying pan the usual way. |
