GF Cheesecake Brownies
I had a craving for cheesecake brownies and wanted to make a small pan instead of a 9x13 pan. So, I adapted a recipe for Claire's Brownies that were posted on The Gluten Free Goddess Blog and used the cheesecake recipe from Roben Ryberg's, The Gluten-Free Kitchen cookbook.

Clare's Brownies - adapted recipe from Gluten Free Goddess Blog
1/2 cup butter
2 ounces unsweetened chocolate, chopped
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla
1/2 cup finely ground almonds or almond meal
1/4 cup brown rice flour
1 teaspoon salt

For Cheesecake
- Roben Ryberg, The Gluten-Free Kitchen
2 1/2 tablespoons butter, softened
4 ounces cream cheese (in a brick, not whipped), softened
1 cup powdered sugar

TEC Notes: The brownies took close to 35 minutes in my oven. Don't take
the brownies out of the oven if they are still 'jiggly' in the middle. My oven
may not be calibrated properly. You can use 1/2 cup brown rice flour and 1/4 cup finely ground almond or almond meal if you prefer your baked goods with less texture.

Preheat oven to 350*F. Grease an 8x8 or a 9x9 baking pan.

Melt butter in saucepan. Turn heat off and add unsweetened chocolate.
Once the chocolate melts, stir in the sugar. Add eggs and vanilla and
mix thoroughly.

Blend the almond meal, brown rice flour and salt in a bowl. Add it to
the chocolate mixture and mix well. Pour batter in the greased baking
pan.

In a mixer cream, butter and cream cheese. Add powdered sugar until
well combined. Drop tablespoons of cream cheese mixture on top of
brownies. Swirl the cream cheese mixture into the brownie batter with
a knife or skewer. Bake for 30 minutes, or until center is no longer 'jiggly'. Let cool completely before cutting.
