Being somewhat lazy I opted to buy some frozen Glutino flax bread. OMG this is the most, vile tasteless thing I've ever put in my mouth.
After that I decided to try to make my own but I didn't really want to commit to buying a whole bunch of flours so I bought this premix stuff, Gluten Free Pantry White Sandwich bread mix.
I was quite surprised but the few pieces I had were very tasty and I really could see myself eating (and enjoying) this. My only problems with it were this:
-small loaf (made in bread maker)
-the top totally caved in to almost the middle of the loaf
-there was still dry mix on the bottom corners where it never mixed properly
What happened? Would I have better luck mixing everything up with my mixer before hand and just pop it in the oven? |

Unless your bread maker has a GF setting it will not properly bake your bread.
If it were me, I would use the mixer and bake it in the reg. oven.
Here are some problems in the process that can make a loaf cave in the middle:
Too much liquids in the mix.
Yeast loaf rising too much or too quickly.
I am glad that you found a pre-mix that you like! _________________
