Hi All!!

I was wondering what you all use or would recommend for the all purpose flour ? I have read that some use the Jules and some use Pamela's....please tell me if there are others, too....I want to get some to try baking.....I am wanting one that is used to replace the regular white flours.....

The Wendy Wark blend is the one I started out with. IMO it's pretty fool-proof. I simply use it in place of the white wheat flour called for in all my old cake, cookies, muffin recipes from my pre-GF cooking days. My friends that eat what I bake say they can't tell that what they are eating is GF. I make my own blend because it's much less expensive that way. I wouldn't suggest using the Wendy Wark for bread recipes other than quick breads.

For most of my basic baking needs, I use what I call 3-2-1

3 cups fine rice flour
2 cups potato starch (no flour)
1 cup tapioca starch

I mix this well and then when I go to use it, I add 1 tsp of xanthan gum or guar gum and use it cup for cup in cookies and brownie type mixes.

I love Namaste Perfect Flour Blend....
I use Namaste Perfect Flour Blend in order to use my old "gluten" recipes and make them GF. Namaste Blend has Xanthan Gum right in it so it makes it easier to just substitute for the gluten flour you used to use. I also have it handy for thickening gravies and white sauces....
Now I also make my own assorted GF flours in my pantry and then use them in GF recipes and add my own xanthan gum. GF Flours such as Brown Rice Flour, White Rice Flour, Sweet Rice Flour, Cornstarch, Tapioca Flour, Sorghum Flour, Potato Starch and Potato Flour. Sounds like alot, but I am a die hard chef! I love to bake and cook!
So in this way I have my flour blend with xanthan gum as a replacement for my old gluten flours and I have my other flours so that I can be more flexible when creating my own GF creations.
