This is elegant and easy. When you invert it over the plate and serve this dessert, it looks like you did a bunch of work with the syrup. I won't tell how easy it is if you won't.
Caramel Flan
3 eggs, beaten
1-1/2 cups milk
2/3 cup white sugar, divided
1 teaspoon vanilla extract
Boiling water
Preheat oven to 325 degrees. Grease 4 6-ounce custard cups. Place them in a baking dish and set aside.
In a heavy saucepan, cook 1/3 cup sugar over medium high heat (don't stir it) until sugar begins to melt. Reduce the heat to low. Continue cooking until sugar is golden brown, stirring frequently. Remove from heat. Drizzle the sugar mixture evenly into the bottom of the prepared custard cups. Tilt and swirl the cups to cover the bottoms. Allow to stand 10 minutes.
Combine eggs, milk, remaining 1/3 cup sugar and vanilla. Beat until they are well combined, but not foamy. Pour the egg mixture evenly into the custard cups. Pour the boiling water into the baking dish surrounding the custard cups to about a 1 inch depth. Bake in preheated oven for 30 - 45 minutes (it takes 45 minutes in my oven), until a knife inserted into the center comes out clean. Serve warm or chilled. When ready to serve, run a knife aound the edges between the custard and the cup to loosen. Invert over a plate and enjoy. _________________ -Colleen
