My coworkers are getting together next week to watch a movie on my boss's awesome home theatre. I'm thinking about bringing some chocolate chip cookies because I'm sick and stressed and lazy. I remember reading you can use the recipe on the back of Nestle's packs of chocolate chips. All you have to do is sub out the regular flour for GF flour. Is that true? Do you need to add xanth gum? I didn't think you added xanth gum to cookies, but the cold meds are addling my brain. I wanted to double check. _________________ Ostrich :>--O==={

The general rules for adding xanthan are:

You have several options for chocolate chip cookies. I personally love to use the Pamela's Baking Mix clone 1:1 for the flour, and omit the salt and baking powder/soda. Works great. You would not need to add additional xanthan gum in this case.
If you are subbing out another GF flour mix, I would use 1/4 - 1/2 teaspoon xanthan per cup of flour. Also, I find it is helpful to add an additional 2 tablespoons GF flour mix for each cup of wheat flour you are subbing for. So if you are subbing 2 cups wheat flour, sub 2-1/4 cups GF flour and 1/2 - 1 teapoon xanthan.

I would not leave out the xanthan/guar gum. When I was too 'cheap' to purchase it at first, everything had the feel of sand in our mouths. YUCK
I use 1 tsp for each cup of flour used. _________________
