Raspberry Torte

Crust

3/4 cup white rice flour
1/3 cup coconut flour
2 tablespoons potato starch
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 cup ground almonds & pecans

1 cup sugar
1/2 cup butter
1/3 cup almond milk
2 teaspoon vanilla

Filling

12 oz. softened Philly cream chesse
1 1/2 cups powdered sugar
1 smaller tub of cool whip [not the larger sized tub]

Topping

4 cups of heisted raspberries [frozen or fresh]
3 tablespoons corn starch
1 cup sugar


Instructions - Crust

Fire up the oven at 350

Cream butter and sugar - beat for 2 minutes
Add vanilla and almond milk - beat for 1 minute
Add dry ingredients to wet ingredients and mix well. Batter is moist and fluffy

Lightly spray 9 x 13 cake pan with cooking spray
Spread mixture evenly into a cake pan.
Bake for 20-25 minutes. Edges will brown and pull away from pan.


Instructions - Filling

Whip powered sugar and cream cheese together until smooth
Gently blend in cool whip
Spread over cooled crust


Instructions - Topping

In sauce pan over medium heat add raspberries, sugar and corn starch.
Stir constantly until mixture comes to boil and becomes transparent.
Set aside to cool. Put mixture in a bowl and store in fridge until needed.

Spoon over dessert after plating each piece.

Alright everyone, Let's make a game of it. Let's guess the ingredients and see how close we can come to the actual recipe.

Based on the tiny air bubbles I'm going to say it's got quite a bit of whipped egg white. Now what's mixed with that....cream or cool whip. plus is there any gelatin for stability?
